Acai Coconut Power Smoothie Bowl

Serves 2
2 cups (10 1/2 ounces) frozen strawberries/fresh strawberries mix
2 sliced bananas
4 tablespoons acai powder
1 cup unsweetened coconut milk
1/2 to 1 tablespoon honey, to taste
Toppings:
Fresh fruit, sliced (bananas, strawberries, and raspberries)
Clear, runny honey
Granola (optional)
Unsweetened coconut flakes (optional)
Dried goji berries (optional)
Chia or hemp seeds (optional)
Unsweetened dark chocolate chunks (optional)
Raw almonds (optional)
1. Add the fruit, acai powder, coconut milk and honey to a blender. Blend until creamy and smooth, adding extra milk as needed to get the blender running. Aim for a frozen-yogurt consistency (it should be thicker than a smoothie).

2. Spoon the acai mixture into bowls and top with sliced fruit, a drizzle of honey, and the optional toppings (if using).

Acai Baby Smoothie Bowl
1/2 banana
1/3 cup of fresh strawberries
1 teaspoon of acai powder
1/4 cup of filtered water
Always check with your little ones pediatrician or your health care provider before trying, as strawberries are high on the list for allergies. I would not recommend introducing it to a baby younger than 7 months. But always ask your Doctor first. I introduced very small amounts to my baby before giving him 2 -3 ounces.
